Dr Matthew Cook joined the ³ÉÈËBÕ¾ in January 2017 as a lecturer in Sport and Exercise Science. Before joining the University, Matthew was a PhD student at the University of Chichester, and he undertook the first doctoral research on examining the effects of New Zealand blackcurrant on physiological responses at rest and during exercise in trained cyclists.

Matthew is an accredited sport and exercise scientist by the British Association of Sport and Exercise Sciences (BASES) and has worked with a range of athletes including cyclists and runners. He is a registered supervisor and reviewer for the BASES supervised experience (SE) experience.

Matthew is also the MPhil/PhD course leader for the School of Sport and Exercise Science and welcomes all enquiries for applications for MPhil/PhD study.

Research Interests:

Matthew's research interests are in Sports Nutrition, Exercise Performance and Muscle Damage. He has an interest into the effects and application of 'functional foods' in Sport and Exercise Science in addition to the health benefits from consuming these foods. Recent studies have examined physiological responses following intake of New Zealand blackcurrant and Matcha green tea. Matthew's research has been the first to observe the effects of New Zealand blackcurrant during exercise with focus on cardiovascular, physiological, metabolic and performance responses.
